Ingredients

  • 1/2 cupdark chocolate (about 3 ounces) (chopped (or use Ghirardelli baking chips))
  • 2 1/2 tablespoonsbutter
  • 1whole egg (room temperature*)
  • 1egg yolk (room temperature*)
  • 3 tablespoonsgranulated sugar ((plus more for ramekins))
  • 1/4 teaspoonvanilla
  • 1/8 teaspoonsalt
  • 2 1/2 tablespoonsflour

    1. Preheat the oven to 400°F. Grease the bottom and sides of two 5-ounce ramekins with butter or shortening, then add about 1 teaspoon of granulated sugar to each, shaking to coat the greased surfaces. Discard any excess sugar.

    2. In a bowl, combine chocolate chips and butter, then melt in the microwave for 30 seconds at 50% power. Stir and heat for an additional 15 seconds if necessary, stirring until smooth.

    3. In a medium bowl, beat the whole egg, egg yolk, sugar, vanilla, and salt until the mixture lightens in color. Stir in the melted chocolate and butter, then add the flour and mix until just combined.

    4. Pour the batter into the ramekins and place them directly on the middle rack of the oven. Bake for 11-12 minutes until the tops are set but the centers still jiggle—avoid overcooking the lava!

    5. Allow the cakes to sit for 1-2 minutes. Run a sharp knife around the edges to loosen, then invert each onto a plate by placing a plate upside down on top of the cake. With hot pads, flip the ramekin so the plate is underneath and the cake is on top. Let it sit for 20 seconds, gently pat the bottom of the ramekin, then lift it straight up.
