Pumpkin Pistachio Energy Balls

Pumpkin Pistachio Energy Balls

Ingredients

  • ½ cupraw pistachios: These nuts add a delightful crunch and provide healthy fats (protein, and fiber.)
  • ¼ cupraw cashews: Cashews lend creaminess to the mixture and contribute additional protein and minerals like magnesium.
  • 10pitted Medjool dates: Naturally sweet (dates serve as the primary sweetener in this recipe and offer essential nutrients.)
  • ¼ cuppumpkin purée: This ingredient is rich in vitamins A and C and adds the signature pumpkin flavor.
  • Pinchof sea salt: A small amount of salt enhances the flavors of the other ingredients.
  • ½ tsppumpkin pie spice: This mixture of spices captures the essence of pumpkin pie (adding warmth and aroma.)
  • ½ tspcinnamon: Cinnamon introduces a sweet and spicy note that complements the pumpkin.
  • ½ tspvanilla extract: Vanilla enhances the overall flavor profile of the energy balls.

Instructions

  1. 1

Prepare the Pistachios: Measure ½ cup raw pistachios and pulse ¼ cup of them in a food processor until they become coarse crumbs. Set aside.

  2. 2

Process the Cashews: Next, take ¼ cup raw cashews and the remaining ¼ cup pistachios and process them in the food processor until they are minced finely.

  3. 3

Add the Remaining Ingredients: To the nut mixture, add 10 pitted Medjool dates, ¼ cup pumpkin purée, a pinch of sea salt, ½ tsp pumpkin pie spice, ½ tsp cinnamon, and ½ tsp of vanilla extract. Blend until the mixture is smooth and well combined.

  4. 4

Shape the Balls: Once you have a smooth mixture, use your hands to roll it into golf-ball-sized portions. Aim for about 9 balls in total.

  5. 5

Coat in Pistachios: Roll each ball in the reserved ¼ cup pistachios to coat the outside. This adds flavor and a pleasing texture.

  6. 6

Storage Options: Enjoy the energy balls immediately, or store them in the fridge or freezer for later snacking!
