Roast Turkey and Cranberry Stuffed Sweet Potatoes

Roast Turkey and Cranberry Stuffed Sweet Potatoes

Ingredients

  • 4medium sweet potatoes (about 1.5 lb: These sweet gems are not only delicious but also rich in vitamins A and C, fiber, and antioxidants.)
  • 2 cupscooked turkey (shredded: Opt for leftover turkey or use freshly cooked turkey breast; it provides lean protein and is a healthier alternative to heavier meats.)
  • 1/2 cupcranberry sauce: This adds a lovely tang and sweetness (but feel free to substitute with homemade sauce or even a light cranberry relish.)
  • 1/4 cupcream cheese (optional: Creamy and rich, it enhances the stuffing’s texture, but it can be omitted for a lighter version.)
  • 1/4 cupchopped green onions: Adds a fresh and sharp flavor to the mix.
  • 1 teaspoongarlic powder
  • 1/2 teaspoonsalt
  • 1/4 teaspoonblack pepper
  • 1 teaspoondried thyme (optional)
  • 1/2 cupshredded cheese: A blend of your choice (such as cheddar or mozzarella, will melt beautifully on top.)
  • Fresh parsley for garnish: This adds a pop of color and freshness to the final presentation.

Instructions

  1. 1

Preheat the oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

  2. 2

Bake the sweet potatoes: Place the sweet potatoes on the baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork. The skin should look slightly wrinkled when they are ready.

  3. 3

Prepare the filling: While the sweet potatoes bake, take a large mixing bowl and combine 2 cups of shredded turkey, 1/2 cup of cranberry sauce, 1/4 cup of cream cheese (if using), 1/4 cup of chopped green onions, 1 teaspoon of garlic powder, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1 teaspoon of dried thyme (if using). Mix thoroughly until well combined.

  4. 4

Prepare the sweet potatoes: Once sweet potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and carefully scoop out some of the flesh, leaving approximately 1/4 inch of sweet potato inside the skin to help maintain structure.

  5. 5

Stuff the potatoes: Take the turkey mixture and generously stuff it into each potato half. Top each stuffed potato with 1/2 cup of shredded cheese.

  6. 6

Final bake: Return the stuffed sweet potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and slightly golden.

  7. 7

Garnish and serve: Finally, remove from the oven and garnish with fresh parsley. Serve warm and enjoy this delightful dish!
