  • 1-1.5 poundsseedless cucumbers ((about 2 English cucumbers))
  • 1 teaspoonsalt
  • 2.5 teaspoonssugar
  • 2 teaspoonssesame oil
  • 3 teaspoonslight soy sauce
  • 1.5 tablespoonsrice vinegar
  • 2-4 clovesgarlic ((finely chopped))
  • 1-2 teaspoonschili oil ((optional))
  • 2 teaspoonstoasted sesame seeds
  • 1/4 cupchopped cilantro

Instructions

    Wash the cucumbers and pat them dry. Make the dressing by combining salt, sugar, sesame oil, light soy sauce, and rice vinegar. Stir until dissolved. Set aside.
