Southern Turnip Greens

Southern Turnip Greens

Ingredients

  • 2 lbsfresh turnip greens: The star of the dish! Make sure to remove the stems to avoid bitterness.
  • 3qts water: The base for cooking down the greens and creating a savory broth.
  • 1/2 to 3/4 lbsmoked meat: Here (we recommend using turkey bacon for a modern and healthier twist while still providing that smoky flavor.)
  • 3chicken bouillon cubes: These enhance the richness of the broth (adding depth to your greens.)
  • 2 clovesgarlic (sliced: Fresh garlic lends a fragrant aroma and an added layer of flavor.)
  • 1-1.5 tbspsalt: Essential for seasoning the greens throughout the cooking process.
  • 1/2yellow onion (diced: Sweet and savory, onion blends beautifully with the other ingredients.)

Instructions

  1. 1

Prepare the base: In a large pot, combine 3 quarts of water, 1/2 to 3/4 lb of turkey bacon (or your choice of smoked meat), 3 chicken bouillon cubes, 1.5 tbsp of salt, 2 sliced cloves of garlic, and 1/2 diced yellow onion. Bring the mixture to a rolling boil over medium-high heat.

  2. 2

Add the greens: Gradually add in 2 lbs of fresh turnip greens, cooking them down as they wilt, allowing them to fit comfortably in the pot.

  3. 3

Simmer: Once the greens are incorporated, reduce the heat to a simmer. Cover the pot and cook for 45 minutes to 1 hour. Stir occasionally to ensure even cooking.

  4. 4

Shred and serve: If you used turkey bacon, you may want to shred the meat and return it to the pot before serving for added texture and a richer flavor profile.
