Spinach and Feta Quesadillas

Ingredients

  • 4medium tortillas (flour, whole wheat, or gluten-free)
  • 2 cupsfresh spinach (chopped)
  • 1 cupfeta cheese (crumbled)
  • 2 tablespoonsolive oil or butter

    Prep: Start by rinsing 2 cups of fresh spinach under cool water. Chop the spinach finely and set it aside. Crumble 1 cup of feta cheese into a bowl. If you choose to use optional add-ins, prepare those as well (¼ cup chopped sun-dried tomatoes, ¼ cup sliced black olives, and ½ cup diced cooked grilled chicken).

    Assemble: Take one tortilla and place it on a plate or clean surface. On one half of the tortilla, spread a portion of the chopped spinach and crumbled feta cheese evenly. If using optional add-ins, sprinkle them on top of the spinach and cheese. Carefully fold the tortilla in half, pressing gently to seal.

    Cook: Heat a skillet over medium heat and add 2 tablespoons of olive oil or butter. Once heated, place the folded tortilla into the skillet. Cook each side for approximately 2-3 minutes, or until golden brown and crispy. You may need to adjust the heat to prevent burning.

    Slice & Serve: After cooking, remove the quesadilla from the skillet and place it on a cutting board. Allow it to cool for a minute before slicing it into wedges. Serve warm with your favorite dips like salsa or guacamole!
