Ingredients

  • 1 poundlean ground beef ((or turkey, chicken, or lamb))
  • ½ mediumwhite onion (finely diced)
  • 1 teaspoonkosher salt
  • to tastefreshly ground black pepper
  • 1 teaspoonsweet paprika
  • 1 teaspoongarlic powder
  • ½ teaspoononion powder
  • ¼ teaspoonmild curry powder
  • 1 poundpasta of choice ((shellbows recommended))
  • 2 cupsplain Greek yogurt ((whole-milk or 2% recommended))
  • 2 clovesgarlic (grated)
  • ¼ teaspoonkosher salt
  • 4 tablespoonssalted butter
  • ½ teaspoonsweet paprika
  • 1 cupcherry tomatoes (halved)
  • to tastefresh chopped parsley and dill

Instructions

    Place a large skillet over medium-high heat and add in the beef. Break apart meat with a meat masher or a wooden spoon. Season with salt, pepper, sweet paprika, garlic powder, onion powder and curry powder. Add diced onion and cook until golden brown, about 15 minutes. Remove from heat to keep warm.

    While the meat is cooking, bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions, then drain and return to the pot.

    In a medium bowl, add yogurt, grated garlic, and salt to make the garlic yogurt sauce. Stir until well combined and adjust salt to taste.

    In a small saucepan over medium heat, melt butter. Whisk in paprika and cook for 20-30 seconds. Remove from heat.

    To serve, add pasta to bowls, top with garlic yogurt sauce, warm beef, halved tomatoes, and garnish with parsley and dill. Drizzle with paprika butter.
