Instructions
- Prepare the base: In a large pot, combine 3 quarts of water, 1/2 to 3/4 lb of turkey bacon (or your choice of smoked meat), 3 chicken bouillon cubes, 1.5 tbsp of salt, 2 sliced cloves of garlic, and 1/2 diced yellow onion. Bring the mixture to a rolling boil over medium-high heat.
- Add the greens: Gradually add in 2 lbs of fresh turnip greens, cooking them down as they wilt, allowing them to fit comfortably in the pot.
- Simmer: Once the greens are incorporated, reduce the heat to a simmer. Cover the pot and cook for 45 minutes to 1 hour. Stir occasionally to ensure even cooking.
- Shred and serve: If you used turkey bacon, you may want to shred the meat and return it to the pot before serving for added texture and a richer flavor profile.
