  • Sauce: ¼ cup low sodium soy sauce, ¼ cup ketchup, 3 tablespoons honey, 2 tablespoons oyster sauce, 1-2 tablespoons Asian chili sauce, 1 tablespoon black vinegar, 1 tablespoon toasted sesame oil, and 1½ teaspoons cornstarch.
  • Stir Fry: 1 cup unsalted cashews, 1 tablespoon oil, ½ white onion (sliced), 1 red bell pepper (sliced), 1 tablespoon ginger (finely chopped), and 6 minced garlic cloves.

Instructions

  1. Marinate the Chicken: In a mixing bowl, whisk together 1 egg, 1 tablespoon reduced sodium soy sauce, ginger powder, garlic powder, onion powder, paprika, and cayenne. Add the 1 pound of chicken thigh strips to the marinade, ensuring each piece is well coated. Cover and marinate for at least 30 minutes, or overnight for maximum flavor.
  2.   3. Bread the Chicken: In a large zip-top bag, combine ½ cup flour, ¼ cup cornstarch, and ½ tablespoon chili powder. Add the marinated chicken to the bag, seal, and shake until all pieces are evenly coated. Shake off any excess breading.
  4. Cook the Chicken: Heat enough oil in a deep frying pan or wok over medium-high heat until hot. Carefully add the breaded chicken pieces in batches, frying until they turn golden brown and crispy, about 4-5 minutes. Transfer cooked chicken to a plate lined with paper towels to drain excess oil.
  5. Toast the Cashews: In a dry skillet over medium heat, add 1 cup unsalted cashews. Toss occasionally until they are lightly toasted and aromatic, about 3-4 minutes. Remove from heat and set aside.

  7. Combine Ingredients: Once the vegetables are tender, pour in the prepared sauce and stir until it thickens, about 2 minutes. Next, add the crispy chicken and toasted cashews, gently folding everything together. Ensure that the chicken is coated in the flavor-packed sauce.
