Instructions

  1. Make the Caramel: In a medium saucepan, combine 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 cup butter, and 1/2 cup + 1 tbsp heavy whipping cream. Cook over medium heat until the mixture comes to a boil. Let it bubble for 5 minutes while stirring occasionally. After 5 minutes, remove from heat and stir in 3/4 tsp vanilla extract.
  2. Prepare the Pecan Layer: Spread 1 1/2 cups chopped pecans on a parchment-lined baking sheet in a single layer. Ensure that they are evenly spaced to allow for better coverage with caramel.
  3. Combine: Pour the prepared caramel mixture over the pecans on the baking sheet. Allow it to set for about 30 minutes at room temperature. This will help the caramel firm up properly.
  4. Melt the Chocolate: While the caramel sets, melt 8 oz of chocolate almond bark according to package instructions. You can use a microwave or a double boiler method for this.
  5. Coat: Once the caramel and pecan layer is set, drizzle the melted chocolate over it. Make sure to cover evenly for a delicious chocolate finish. Let it cool again until hardened, which may take about 30 minutes.
