  • For the Apples:
    • 5 lbs Granny Smith apples, peeled & chopped
    • 1 cup sugar
    • 1 tbsp cinnamon
    • 12 tbsp flour (if needed)
  • For the Filling:
    • 2 boxes vanilla instant pudding
    • 3.5 cups milk
    • ½ cup sour cream
    • 8 oz Cool Whip, thawed
  • For the Layers:
    • 21 cinnamon graham crackers
    • 16 oz caramel apple dip

Instructions

  1. Prepare the Apples: In a large pot, combine 5 lbs of peeled and chopped Granny Smith apples, 1 cup of sugar, and 1 tbsp of cinnamon. Cook over medium heat, stirring occasionally, until the apples are tender and the mixture has thickened slightly, approximately 15-20 minutes. If the mixture seems too runny, sprinkle in 1-2 tbsp of flour while stirring, and let it cook for a few more minutes. Once cooked, remove from heat and allow to cool completely.
  2. Make the Filling: In a large mixing bowl, whisk together 2 boxes of vanilla instant pudding and 3.5 cups of milk until well combined. Let it sit for about 5 minutes to thicken. After it thickens, gently fold in ½ cup of sour cream and 8 oz of thawed Cool Whip until fully incorporated, creating a fluffy filling.
  3. Layer the Ingredients: In a 9×13 inch baking dish, lay down a layer of 21 cinnamon graham crackers at the bottom. On top of the graham crackers, spread half of the cooked apple mixture evenly. Follow this by spreading half of the vanilla pudding filling over the apples. Repeat these layers by adding another layer of graham crackers, remaining apples, and ending with the remaining pudding filling.
  4. Finish with Caramel: In a small saucepan, gently heat 16 oz of caramel apple dip until it becomes pourable. Pour this warm caramel over the top layer of the pudding filling, spreading it evenly.
  5. Chill the Cake: Cover the dish with plastic wrap and refrigerate for at least 8 hours or overnight. This chilling time allows the flavors to meld beautifully and makes the cake easier to slice.
