Instructions
- Mix Bowl 1: In a medium mixing bowl, beat 6 egg yolks and 3/4 cup granulated sugar until the mixture is smooth and creamy. Gradually stir in 1 1/2 cups mascarpone until fully combined. Set aside.
- Mix Bowl 2: In another bowl, whip 1 1/2 cups heavy cream until stiff peaks form. Gently add 1/4 cup + 2 tablespoons dulce de leche and a pinch of salt. Fold gently until well combined.
- Combine: Carefully fold the whipped cream mixture from Bowl 2 into the creamy yolk mixture from Bowl 1. This will create a light, fluffy filling.
- Pan Prep: Dust the bottom of an 11×7 inch pan with 1/2 cup cocoa powder to prevent sticking and add an extra layer of flavor.
- Layer: Briefly dip ladyfingers (approximately 3 boxes) in 2 cups of strong coffee or espresso, ensuring they absorb some of the liquid without becoming soggy. Start layering them in the dusted pan, cover with half of the creamy mixture, repeat with another layer of dipped ladyfingers, and finish with the remaining cream mixture. Dust the top with more cocoa powder or add shaved chocolate from a chocolate bar for garnish.
- Chill: Cover the pan with plastic wrap and refrigerate for at least 4 hours, but ideally for 12 to 24 hours to allow the flavors to meld.
- Serve: When ready to serve, cut into squares and enjoy straight from the fridge. You can top each slice with additional cocoa powder or chocolate shavings for an extra treat!
