Ingredients

  2. Prepare the apple mixture: In a mixing bowl, combine 2 medium baking apples (peeled & chopped), ½ cup light brown sugar, 2 tsp ground cinnamon, and 1 tsp ground ginger. Mix thoroughly and set aside to let the flavors meld.
  3. Mix wet ingredients: In another bowl, whisk together 1 large egg (room temp), ⅓ cup granulated sugar, ¼ cup vegetable oil, ¼ cup sour cream (room temp), and 2 tsp vanilla extract until smooth.
  4. Combine dry ingredients: In a separate bowl, mix 1 cup all-purpose flour, 1 tsp baking soda, and ½ tsp kosher salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Incorporate apples: Gently fold in ¾ of the apple mixture into the batter until evenly distributed. Pour the mixture into the prepared loaf pan, smoothing it out evenly. Top with the remaining apple mixture to create a delicious topping.
  6. Bake: Place the loaf pan in the oven and bake for 50-55 minutes. You’ll know it's done when the internal temperature reaches 200°F (93°C) or when a toothpick inserted in the center comes out clean. Once baked, allow it to cool in the pan for at least 30 minutes before transferring it to a wire rack.
  7. Make the glaze: In a small bowl, whisk together 1 cup powdered sugar (sifted), 1 tsp vanilla extract, and 3 tbsp milk. Adjust the consistency to your liking - add more milk for a thinner glaze or more powdered sugar for a thicker glaze.
  8. Glaze the bread: Once the bread has cooled, pour the glaze over it just before serving to ensure it's beautifully coated and deliciously sweet!
