Prepare the cream: In a mixing bowl, combine 1 cup heavy whipping cream, 2 tbsp confectioners' sugar, and 1 tsp vanilla extract. Whip until thick and set aside.
Cinnamon sugar: In a small bowl, mix together 1 cup granulated sugar and 1 tsp ground cinnamon until well combined.
Heat the oil: In a deep fryer or large pot, heat oil to 400°F (204°C). Use enough oil to fully submerge the apple fries for even frying.
Cut the apples: Carefully slice the 2 large Granny Smith apples into ½-inch sticks. Drizzle the apple sticks with juice from 1 lemon to keep them from browning and enhance their flavor.
Coat the apples: In a large bowl, toss the apple sticks with the mixture of 1 cup all-purpose flour, 1 cup cornstarch, and 1 tbsp baking powder until well-coated.
Fry the apples: In small batches, gently place the coated apple sticks into the hot oil. Fry for about 60-70 seconds or until golden brown and crispy. Make sure not to overcrowd the fryer, as this can lower the oil temperature.
Serve: Once cooked, remove the apple fries from the oil and drain them on paper towels. While they are still hot, toss them in the cinnamon sugar mixture for an extra burst of flavor. Enjoy them with the prepared whipped cream, as well as caramel and chocolate sauces for dipping!
