Preheat the oven: Begin by setting your oven to 375°F (190°C). While the oven is heating, grease a large baking sheet or pan with olive oil or cooking spray to prevent sticking.
Prepare the potatoes: In a mixing bowl, combine the potato wedges with 4 tablespoons of olive oil, 2 teaspoons of garlic powder, salt and pepper to taste, and 1 ½ teaspoons of Italian seasoning. Toss well to ensure each wedge is evenly coated with the mixture.
Add the Parmesan: Sprinkle ½ cup of shredded Parmesan cheese over the seasoned potato wedges. Toss gently again, allowing the cheese to cling to the surfaces of the wedges.
Arrange and bake: Place the well-seasoned potato wedges in a single layer on the greased baking sheet. Make sure there is space between each wedge to promote even cooking and crisping.
Bake: Place the baking sheet in the preheated oven and cook for 25–35 minutes. Check for doneness by pressing a fork into a wedge; it should be tender on the inside and golden brown on the outside. For extra crispiness, flip the wedges halfway through the cooking time.
