Blackberry Tarts

Delicious mini tarts filled with mascarpone cheese, lemon curd, and fresh blackberries.

Ingredients
  

  • 12 pieces Athens mini fillo shells 1 box contains 12 shells
  • ¼ cup mascarpone cheese
  • 3 Tbsp. lemon curd
  • 3 Tbsp. blackberry jelly or berry jam
  • 1 cup blackberries
  • 1 lemon (for zesting)

Method
 

  1. Remove mini fill shells from the freezer and place on a plate—no baking involved.
  2. In a small bowl, whip together the lemon curd, jelly, and mascarpone cheese. Fill the shells with a teaspoon of the mixture.
  3. Top each filled shell with a large blackberry.
  4. Zest a lemon and sprinkle the zest on top of the cups; serve!
