Blue Wave Smoothie Bowl

A vibrant smoothie bowl made with blue spirulina and topped with fresh fruits.

Ingredients
  

  • 1/2 cup coconut water
  • 1 cup frozen pineapple chunks
  • 1/2 medium banana, broken into pieces and frozen
  • 2 tbsp frozen snack-size passion fruit pieces
  • 1/4 tsp blue spirulina powder
  • Greek yogurt, for swirling and piping
  • Toppings: mango, cantaloupe, green grapes, red grape, honeydew, strawberry, black sesame seeds, heart sprinkle
  • Toppings: strawberries, mango, curly kale, black sesame seeds, candy eyes
  • Toppings: mango, cantaloupe, blueberries, strawberry, banana
  • Toppings: kiwi, mango, cantaloupe, honeydew, grapes, candy eyes, toasted quinoa

Method
 

  1. In a blender, puree coconut water, pineapple, banana, passion fruit, and spirulina until smooth.
  2. Transfer to a bowl. If using Greek yogurt, pipe or swirl as desired, adding a splash of water to the yogurt if too thick. Decorate with cut fruit, kale, toasted quinoa, sesame seeds, and candy eyes, if using.
