Blueberry Breakfast Quesadilla

Kick off your morning with a tasty blueberry breakfast quesadilla! Quick and flavorful, it’s the perfect way to start your day.

Ingredients
  

  • 1 large light tortilla or Flatout wrap - This serves as the foundation of your quesadilla providing a hearty yet flexible vessel for the filling.
  • 2 wedges of The Laughing Cow Cream Cheese Spread - Cinnamon Cream - The creamy spread adds richness and flavor. If cinnamon cream is unavailable you may opt for the original flavor with a sprinkle of cinnamon.
  • ½ cup frozen blueberries - These not only deliver a burst of sweetness but also infuse the dish with antioxidants and fiber.

Method
 

  1. Heat your skillet: Begin by heating a nonstick skillet over medium-high heat. This will ensure a crispy quesadilla.
  2. Prepare the filling: While the skillet is heating, take your 2 wedges of The Laughing Cow Cream Cheese Spread - Cinnamon Cream and spread them on half of 1 large light tortilla or Flatout wrap. Ensure even coverage for maximum flavor.
  3. Add the blueberries: Layer ½ cup frozen blueberries over the cream cheese spread. Feel free to be generous with the blueberries!
  4. Cook the quesadilla: Spray the preheated skillet with nonstick cooking spray. Prepare to fold the flatbread over the filling carefully. Place it in the skillet.
  5. Grill to perfection: Grill the quesadilla for about 2 minutes on one side. Flip it over and grill for another 2 minutes, or until the outside is crispy and golden brown. You want a satisfying crunch when you bite into it!
  6. Slice and enjoy: Remove the quesadilla from the skillet and let it cool slightly. Cut it into wedges and serve warm.
