- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Remove any loose outer leaves from the cabbage, then slice off the bottom of the core to create a flat base. Stand the cabbage upright and slice into 1-inch-thick steaks. Arrange on the baking sheet.
- In a bowl, mix olive oil, garlic powder, and salt. Brush half onto the cabbage steaks, flip, and brush with the remaining oil.
- Roast for 30 to 40 minutes until well browned and tender, rotating halfway. Season with salt and pepper.
- Serve with lemon wedges.
