Method
- Place the Cadbury mini eggs inside of a zip-top bag and use a mallet or rolling pin to break up the candies into smaller pieces. Set aside.
- Preheat the oven to 350 degrees Fahrenheit. Line cookie sheet trays with parchment paper or a silicone baking mat.
- Stir together the flour, salt, and baking soda in a large bowl.
- In the bowl of a stand mixer, cream together the butter and both sugars. Add the eggs and vanilla. Mix well.
- Add the dry ingredients to the butter mixture and mix until just combined. Add the chocolate chips and 1/2 cup of crushed Cadbury mini eggs. Mix gently.
- Use a cookie scoop to spoon the dough onto the prepared baking sheet about 3 inches apart. Press the remaining Cadbury mini egg pieces into the tops.
- Bake at 350°F for 10 minutes or until the edges are just starting to brown. Allow to cool slightly before transferring to a wire rack.
