Skewer the ingredients: Once the sweet potatoes are roasted, it's time to assemble the skewers. Take a soaked wooden skewer and start by skewering a sweet potato chunk, followed by wrapping a piece of turkey bacon around it, alternating until the skewer is full. Aim for about 4-5 sweet potato pieces per skewer.
Season the skewers: In a small bowl, mix together ½ cup of brown sugar and 1 teaspoon of cinnamon. Sprinkle this mixture generously over the skewers, ensuring that all sides are evenly coated.
Bake the skewers: Place the assembled skewers back on the lined baking sheet. Bake in the preheated oven for an additional 10-15 minutes, or until the turkey bacon is crispy and caramelized.
Add the finishing touch: While the skewers are baking, warm 1 cup of marshmallow fluff in the microwave for about 20-30 seconds until it is more pourable. Once the skewers are done baking, remove them from the oven and drizzle the warm marshmallow fluff over the top of the skewers.
