Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, frozen
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup chives, chopped
  • 3/4 cup buttermilk
  • 2 tbsp buttermilk (for brushing)

Method

  1. Preheat oven to 400°F. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Grate the cold butter using a cheese grater. Blend the grated butter in with the flour mixture using a pastry cutter or 2 knives until the mixture looks like coarse crumbs.
  3. Mix in the cheese and chives. Add the buttermilk and mix until JUST incorporated. DO NOT over mix.
  4. Knead the dough briefly on a floured surface and shape into a circle about 1 1/2 inches thick. Cut into wedges.
  5. Place wedges on a parchment-lined baking sheet, brush with buttermilk, and bake for 20-22 minutes until golden brown.
  6. Cool on a wire rack.

Notes

These scones are best enjoyed warm.
