Cilantro Lime Cabbage Salad

Ingredients
  

  • 1 medium head green cabbage about 6-8 cups once shredded
  • 1/2 cup olive oil
  • 1/3 cup fresh lime juice
  • 1/2 teaspoon lime zest
  • 1/2 cup packed cilantro
  • 2 cloves garlic
  • 1 teaspoon dijon mustard
  • 1 teaspoon pure maple syrup
  • 1/4 teaspoon ground cumin
  • to taste salt and black pepper about 1/2 teaspoon salt and 1/4 teaspoon black pepper used

Method
 

  1. Cut the stalk of the cabbage off and peel a few of the outer layers off. Thinly shred the entire head of cabbage and add to a large bowl.

  2. Add all dressing ingredients into a blender and blend until creamy and completely combined, about 30 seconds to 1 minute. Pour the dressing over the shredded cabbage and mix together until completely coated.
    1/2 cup olive oil, 1/3 cup fresh lime juice, 1/2 teaspoon lime zest, 1/2 cup packed cilantro, 2 cloves garlic, 1 teaspoon dijon mustard, 1 teaspoon pure maple syrup, 1/4 teaspoon ground cumin, to taste salt and black pepper
  3. Add in about 1/4 cup chopped fresh cilantro and mix well. Enjoy immediately or store in the refrigerator for a couple hours to allow flavors to develop. Store in an air-tight container for 4-5 days.
