Cinnamon Roll French Toast Roll-Ups

Ingredients
  

  • 1/2 cup + 2 tbsp unsalted butter softened: Butter adds richness and flavor to the roll-ups. Using unsalted butter allows you to control the saltiness in the dish.
  • 1/4 cup light brown sugar: This adds a subtle caramel flavor and sweetness to the cinnamon butter perfectly complementing the cinnamon.
  • 1 tbsp cinnamon: Ground cinnamon infuses the whole dish with its warm sweet aroma, making it an essential ingredient.
  • 8 slices thick soft bread: For the best results, use bread like challah or brioche. The thickness helps to hold the filling and absorbs the egg mixture beautifully.
  • 2 eggs: Eggs act as a binder and provide protein which is essential for a filling breakfast.
  • 1/4 cup milk: Milk adds moisture to the egg mixture creating a custardy texture.
  • 1 tsp vanilla extract: Vanilla adds depth and enhances the sweetness of the dish.
For assembly, you will also need the following ingredients:
  • 1/4 cup granulated sugar: This is used for coating the roll-ups adding a delightful crunch.

  • 1.5 tbsp unsalted butter softened: Helps to enrich the sugar coating.

  • 1/4 cup confectioners’ sugar: This sweetens the icing making it perfect for drizzling or dipping.

Method
 

  1. Prepare the Cinnamon Butter: In a small bowl, mix together 1/2 cup + 2 tbsp unsalted butter, softened, 1/4 cup light brown sugar, and 1 tbsp cinnamon until well combined. This will create a luscious spread for your bread.
  2. Prepare the Bread: Trim the crusts off 8 slices of thick, soft bread (such as challah or brioche). Use a rolling pin to flatten each slice gently. This makes it easier to roll them up. Spread an even layer of the cinnamon butter on each slice.
  3. Roll the Bread: Starting at one end, carefully roll each slice tightly. Repeat this process until all the slices are rolled up.
  4. Make the Egg Mixture: In a bowl, whisk together 2 eggs, 1/4 cup milk, and 1 tsp vanilla extract until well combined. This mixture will coat your roll-ups.
  5. Cook the Roll-Ups: In a large skillet, melt some butter over medium heat. Dip each roll-up into the egg mixture, ensuring they're thoroughly coated. Place them in the skillet and cook for about 3-4 minutes on each side, or until golden brown.
  6. Prepare the Coating: In a separate shallow dish, mix 1/4 cup granulated sugar and 1 tsp cinnamon. Once the roll-ups are cooked, roll each in the cinnamon-sugar mixture to coat.
  7. Make the Icing: In a bowl, blend together 1.5 tbsp unsalted butter (softened), 1/2 cup cream cheese (room temperature), and 1/4 cup confectioners’ sugar until smooth. This icing can be drizzled over the roll-ups or served as a dip.
