Ingredients
  

Dressing:
  • 1/2 cup olive oil - enhances the overall richness and mouthfeel of the dip.

  • 1/4 cup white wine vinegar - provides a tangy kick that brightens the flavors.

Vegetables:
  • 1 lb Roma tomatoes diced - juicy and flavorful, they give the dip a fresh pop.
  • 1 can black-eyed peas drained (15 oz) - a hearty staple that complements the other flavors.
  • 1 can black beans drained (15 oz) - adds protein and richness to the dip.
  • 1 can sweet corn drained (15 oz) - provides sweetness and crunch.
  • 1 red onion diced - offers a sharp bite and beautiful color.
  • 1 green bell pepper diced - adds crunch and freshness.
  • 1 red bell pepper diced - brings in sweetness and vibrant color.

Method
 

  1. Prepare the Dressing: In a medium bowl, combine 1/2 cup olive oil, 1/4 cup granulated sugar, 1/4 cup white wine vinegar, 1 tsp chili powder, and salt to taste. Whisk together until the mixture is smooth and the sugar is fully dissolved. This dressing is essential as it melds all the flavors together.
  2. Chop the Vegetables: Dice 1 lb Roma tomatoes, 1 red onion, 1 green bell pepper, and 1 red bell pepper into small cubes. Rinse and drain 1 can black-eyed peas, 1 can black beans, and 1 can sweet corn. Place all the veggies, beans, and corn into a large mixing bowl.
  3. Combine Ingredients: Pour the dressing over the mixed vegetables in the large bowl. Gently toss everything together until the vegetables are evenly coated. The goal is to ensure that each bite is full of flavor!
  4. Chill the Dip: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, allowing the flavors to meld together. Ideally, allow it to chill for a few hours or overnight. The longer it sits, the richer the flavors will become.
