Creamy Chicken and Orzo Skillet

Ingredients
  

  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1.25 lbs boneless chicken thighs
  • 2 Tbsp cooking oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1.5 cups orzo
  • 1.5 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 Tbsp salted butter
  • 1/4 cup parmesan cheese

Method
 

  1. Mix paprika, oregano, thyme, garlic powder, onion powder, salt, and pepper in a bowl.
  2. Blot chicken thighs dry and season both sides with the spice blend.
  3. Heat oil in a skillet, cook chicken until browned on both sides, then remove.
  4. Sauté onion and garlic until translucent.
  5. Add orzo and broth, stir, and return chicken to the skillet. Cover and simmer.
  6. After 15 minutes, remove chicken, stir in cream and butter, then add parmesan.
  7. Return chicken to skillet, garnish if desired.

This dish is perfect for busy nights and can be prepared in one pan.
