Creamy Chicken Lasagna with White Sauce

Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 2 cups of heavy cream
  • 1 cup of shredded cheese cheddar or mozzarella works best
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs oregano, basil, thyme
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach fresh or frozen, thawed and drained

Method
 

  1. Prepare the oven: Preheat your oven to 375°F (190°C). This will ensure even cooking throughout the dish once it’s time to bake.
  2. Cook the chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the 4 boneless, skinless chicken breasts with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Once the oil is hot, place the chicken breasts in the skillet and cook until golden brown, about 4-5 minutes on each side. They should reach an internal temperature of 165°F (74°C). Remove from heat and let them rest.
  3. Prepare the creamy sauce: In the same skillet, add 2 cloves of minced garlic and sauté briefly until fragrant, about 1 minute. Pour in 2 cups of heavy cream and stir to combine. Add 1 teaspoon of dried Italian herbs and continue to cook on low heat, stirring occasionally. Allow it to simmer for about 5-7 minutes until slightly thickened.
  4. Layer the dish: In a large baking dish, spread a thin layer of the cream sauce on the bottom. Slice the cooked chicken breasts and arrange them in a single layer over the sauce. Top with 1 cup of spinach and pour the remaining sauce over the chicken.
  5. Add cheese: Sprinkle 1 cup of shredded cheese and 1/2 cup of grated Parmesan cheese evenly on top of the sauce. This will create a delicious cheesy crust as it bakes.
  6. Bake the dish: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  7. Serve: Allow the dish to cool for a few minutes before serving. This dish pairs well with a simple side salad or steamed vegetables for a complete meal.
