Step 1: In a large pan, melt 2 tablespoons of butter over medium-high heat.
Step 2: Season 2 pounds of chicken strips with 1 teaspoon of sea salt and 1 teaspoon of ground pepper. Add the chicken to the pan and brown on all sides for about 8 minutes. Once browned, remove the chicken from the pan and set it aside.
Step 3: In the same pan, add 2 tablespoons of diced garlic and 1 diced white onion. Sauté for approximately 5 minutes, or until the mixture turns golden.
Step 4: Pour in ½ cup of chicken stock and add ½ cup of sliced roasted red pepper. Allow it to reduce for about 5 minutes, or until the liquid has reduced by half.
Step 5: Stir in 1 cup of heavy cream and ½ cup of shredded parmesan. Whisk to combine until the sauce is smooth.
Step 6: Return the heat to medium-low and add 1 tablespoon of Italian seasoning, ½ cup of sliced pepperoncini, and the browned chicken back into the pan. Simmer until the chicken is cooked through, about 10-15 minutes.
Step 7: Once everything is combined and heated through, remove from heat. Serve over steamed vegetables, pasta, or rice, or enjoy it solo!
