Ingredients

  • 1 lb 450 grams boneless and skinless chicken breasts: The main protein, providing a tender and juicy base for the flavors.
  • Salt: Enhances the overall taste of the chicken.
  • Ground black pepper: Adds a slight heat and depth to the flavor profile.
  • 2 large eggs: Acts as a binding agent for the panko coating.
  • 1 cup panko or breadcrumbs: Creates a crispy exterior for the chicken bites.
  • White sesame seeds: For garnishing adding a nutty flavor and visual appeal.
  • Chopped scallions or chives: Provides a fresh herby garnish.
Honey Garlic Sauce:
  • 2 cloves garlic finely minced: Infuses a robust and aromatic flavor into the sauce.
  • 4 tablespoons honey: Offers a natural sweetness balancing the garlic’s sharpness.
  • 2 tablespoons soy sauce: Contributes a savory umami depth.
  • 2 tablespoons Thai sweet chili sauce: Adds a sweet and mildly spicy kick.
  • 1/4 cup water: Thins the sauce to the desired consistency.
  • 1/2 tablespoon corn starch: Thickens the sauce allowing it to cling to the chicken.

Method

  1. Preheat Oven: Start by preheating your oven to 375°F (190°C).
  2. Season Chicken: Season the chicken cubes with salt and black pepper to taste.
  3. Coat Chicken: Dip each chicken piece in beaten eggs, then roll in panko or breadcrumbs. Ensure each piece is well-coated.
  4. Bake Chicken: Arrange the coated chicken on a parchment-lined baking sheet. Bake for 12-15 minutes or until golden brown. Consider turning the pieces midway for even browning.
  5. Prepare Sauce: While the chicken bakes, mix all sauce ingredients in a small saucepan. Whisk well and cook on low heat until the sauce thickens slightly.
  6. Combine and Serve: Once the chicken is baked, transfer it to a bowl. Pour the prepared sauce over the chicken and gently toss to coat evenly. Garnish with sesame seeds and scallions or chives before serving.

Notes

  • For an extra crispy coating, lightly spray the coated chicken with cooking spray before baking.
  • If you prefer a spicier kick, add a pinch of red pepper flakes to the sauce.
  • Garnishing with sesame seeds and scallions not only adds flavor but also enhances the visual appeal.
