- Preheat the oven to 400 degrees F.
- In a large bowl, add the halved potatoes, then pour over the melted butter, garlic powder, dried oregano, salt and black pepper. Gently toss the potatoes with tongs or clean hands until well coated.
- In a baking dish, add the melted butter and evenly spread it over the bottom. Sprinkle with Parmesan cheese.
- Place potatoes cut-side down onto the cheese in a single layer. Roast the potatoes for 35 to 40 minutes until fork-tender and the cheese is golden brown.
- If using, spread the roasted garlic feta dip on a platter and flip the potatoes onto it. Garnish with lemon zest, fresh herbs, and flaky sea salt.
