Crispy Roasted Chickpeas Recipe

This is the absolute best roasted chickpeas recipe. The foolproof method results in flavorful, crispy chickpeas that turn out perfectly every time! Delicious on top of Greek Salad!

Ingredients
  

  • 15 oz chickpeas drained and rinsed
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ to 1 Tablespoon olive oil

Method
 

  1. Preheat oven to 400 degrees F.
  2. Lightly spray a baking sheet with cooking oil or cooking spray. Set aside.
  3. Drain and rinse the chickpeas.
  4. Pat dry the chickpeas on paper towels until they are no longer wet.
  5. In a small bowl, mix together cumin, paprika, garlic powder, sea salt, onion powder and pepper.
  6. Transfer the dried chickpeas to the prepared baking sheet.
  7. Bake in the preheated oven for 15 minutes without oil or spices.
  8. Remove the chickpeas from the oven, drizzle olive oil and stir until evenly coated.
  9. Add the spice mixture and stir until evenly distributed.
  10. Bake for an additional 10 minutes, stir, then bake for another 5-10 minutes.
  11. Turn off the oven and let the chickpeas cool inside to achieve maximum crispiness.
  12. Serve with your favorite recipes.
