Ingredients

  • 3/4 cup mini chocolate chips – Offers bursts of chocolate in every bite.
  • 1 1/2 cups semi-sweet chocolate chips – Used to create the ganache topping for a rich flavor.
  • 1/2 cup heavy cream – Combines with chocolate chips to form a smooth ganache.

Method
 

  1. Prepare the pan: Line an 8x8 inch square pan with parchment paper, allowing some overhang to make it easy to lift out the bars later.
  2. Cream the butter and sugars: In a mixing bowl, beat together 1/2 cup unsalted butter, 1/3 cup granulated sugar, and 1/3 cup light brown sugar until the mixture is creamy and well combined. This should take about 2-3 minutes.
  3. Add flavorings: Mix in 1 tsp vanilla extract until just combined.
  4. Incorporate dry ingredients: Gradually add 1 cup all-purpose flour and 1/4 tsp salt to the wet mixture, stirring until just combined.
  5. Add milk: Pour in 1/4 cup milk, mixing until the batter is completely smooth and free from lumps.
  6. Add chocolate chips: Gently fold in 3/4 cup mini chocolate chips until evenly distributed.
  7. Press the mixture into the pan: Spoon the cookie dough mixture into the prepared pan, pressing it down evenly to form the bottom layer.
  8. Make the ganache: In a medium saucepan, heat 1 1/2 cups semi-sweet chocolate chips and 1/2 cup heavy cream over low heat. Stir frequently until the mixture is completely smooth and well combined.
  9. Top the cookie layer: Pour the chocolate ganache over the pressed cookie dough layer, spreading it evenly to cover the top.
  10. Chill: Refrigerate the entire dish for at least 2 hours to allow the bars to set properly.
  11. Serve: Once chilled, lift the bars out of the pan using the parchment paper. Cut into squares and enjoy your homemade cookie dough bars!
