Delicious Apple Crumble Cheesecake

Apple Crumble Cheesecake combines a spiced cookie crust, creamy cheesecake filling, cinnamon-infused apples, and a crunchy crumble topping.

Ingredients
  

Spiced Cookie Crust:
  • 1 ½ cups of crushed spiced cookies such as gingersnaps or speculoos
  • ½ cup of unsalted butter melted
  • 2 tablespoons of brown sugar
Cream Cheese Filling:
  • 2 8-ounce packages of cream cheese, softened
  • ¾ cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 3 large eggs
  • ½ cup of sour cream
Sweet Apple Topping:
  • 3 medium apples peeled, cored, and sliced (preferably Granny Smith or Honeycrisp)
  • ¼ cup of granulated sugar
  • 1 teaspoon of ground cinnamon
Crumble Topping:
  • 1 cup of rolled oats
  • ½ cup of all-purpose flour
  • ½ cup of brown sugar
  • ½ cup of unsalted butter softened

Method
 

Prepare the Crust:
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 ½ cups of crushed spiced cookies, ½ cup of melted unsalted butter, and 2 tablespoons of brown sugar. Mix until the crumbs are evenly coated.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes and then set aside to cool.
Make the Cream Cheese Filling:
  1. In a large mixing bowl, beat 2 packages of softened cream cheese with ¾ cup of granulated sugar until smooth and creamy.
  2. Add 1 teaspoon of vanilla extract, and mix in 3 large eggs one at a time, ensuring each egg is fully incorporated.
  3. Finally, stir in ½ cup of sour cream until well combined.
  4. Once the filling is smooth, pour it over the cooled crust in the springform pan.
Prepare the Apple Topping:
  1. In a mixing bowl, toss 3 sliced apples with ¼ cup of granulated sugar and 1 teaspoon of ground cinnamon until evenly coated.
  2. Layer the apple mixture on top of the cheesecake filling.
Make the Crumble Topping:
  1. In a separate bowl, combine 1 cup of rolled oats, ½ cup of all-purpose flour, and ½ cup of brown sugar.
  2. Add ½ cup of softened unsalted butter and mix until crumbly.
  3. Sprinkle the crumble topping evenly over the apples.
Bake the Cheesecake:
  1. Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set, and the center is slightly jiggly.
  2. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour to prevent cracking.
  3. Once cooled, refrigerate the cheesecake for at least 4 hours, or preferably overnight, to set completely.
