Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, allowing some overhang for easy removal.
In a medium bowl, whisk together 2 cups of all-purpose flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. Set this mixture aside; it’s important to evenly distribute the dry ingredients.
In a large mixing bowl, cream together 1/2 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy. This should take about 3-4 minutes using an electric mixer.
Add in 1 large egg, 1 teaspoon of vanilla extract, and 1/2 teaspoon of almond extract. Mix until fully combined.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Overmixing can lead to tough cookie bars.
Spread the dough evenly into the prepared baking pan, smoothing the top with a spatula. The dough will be thick, so take your time to make sure it’s even.
Bake for about 20-25 minutes, or until the edges are lightly golden and the center is set. A toothpick inserted in the center should come out clean.
Remove from the oven and allow to cool in the pan for about 10 minutes before lifting it out using the parchment paper. Transfer to a wire rack to cool completely.
