Boil the potatoes: Start by taking 4 large potatoes, wash and peel them. Place the potatoes in a large pot filled with water and add a pinch of salt. Bring the water to a boil and cook until the potatoes are soft enough to be pierced with a fork, roughly 15-20 minutes. Drain the water and allow them to cool.
Mash the potatoes: Once cooled, peel the potatoes if you haven’t yet, and transfer them to a mixing bowl. Mash them until smooth, without any lumps. This creates a creamy base for your cakes.
Mix in the ingredients: To the mashed potatoes, add 1 cup of shredded cheese, 1/2 cup of diced green onions, 1/4 cup of all-purpose flour, and 1 egg. Season with salt and pepper to taste. Mix everything together until well combined.
Shape the patties: With damp hands, take portions of the mixture (about 1/4 cup each) and form them into small, oval-shaped patties. Place them on a plate, ready for frying.
Fry the patties: Heat a generous amount of oil in a large frying pan over medium heat. Once hot, carefully add the patties, ensuring they are not overcrowded in the pan. Fry for about 3-4 minutes per side, or until golden brown and crispy. Flip gently with a spatula.
Drain excess oil: After frying, transfer the cooked patties to a plate lined with paper towels to absorb any excess oil.
Serve warm: These potato cakes are best enjoyed warm, straight from the pan. Serve them with a side of your favorite dipping sauce or condiment.
