Ingredients
  

  • 16 ounces rotini (or other medium pasta)
  • ¾ cup English cucumber (diced)
  • 1 pint grape tomatoes (halved)
  • 1 bell pepper (red or orange, diced)
  • ½ cup sliced pitted olives
  • ½ cup crumbled feta cheese
  • cup diced red onion
  • 1 cup Greek dressing
  • ¼ cup red wine vinegar
  • cup olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon dried oregano
  • salt and pepper to taste

Method
 

  1. Whisk together dressing ingredients.
  2. Cook pasta al dente according to package directions. Rinse under cold water.
  3. Combine all ingredients in a large bowl. Add dressing and toss.
  4. Refrigerate at least 2 hours before serving.

Notes

Feel free to add grilled chicken to make it a complete meal.
