Ingredients

  • 1/2 cup white sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 tablespoons white sugar
  • 1 cup water
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil plus more for frying
  • 1 cup all-purpose flour
  • 3 1/2 ounces dark chocolate chopped
  • 1/2 cup heavy cream

Method

  1. In a small, shallow bowl, stir together the sugar and cinnamon.
  2. In a small saucepan over medium heat, whisk together the water, sugar, salt, and vegetable oil. Bring to a boil then remove from heat. Stir in the flour to form a smooth ball.
  3. Heat vegetable oil in a heavy-bottomed pot to 375ºF. Line a plate with paper towels.
  4. Transfer the dough to a pastry bag fitted with a star tip and pipe 4-inch lengths into the hot oil.
  5. Fry until golden brown, then transfer to the plate to drain and roll them in the cinnamon-sugar mixture.
  6. Place chopped chocolate in a bowl and pour warmed cream over it. Let sit for 1 minute, then stir to combine.

Notes

Serve the churros warm with a side of chocolate sauce for dipping.
