Easy Peach Salsa & Tortilla Chips

Ingredients
  

  • 3-4 pieces ripe peaches chopped into bite-size pieces
  • 1 piece red bell pepper chopped into bite-size pieces
  • 1 cup black beans
  • 1 cup corn kernels fresh, frozen, or canned in water
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 3 tbsp cold-pressed avocado oil
  • 2 tbsp fresh lime juice
  • 1 tsp cumin
  • pinch sea salt
  • 8 pieces small whole wheat or corn wraps for chips
  • 1 tsp fine sea salt
  • 1 tsp cumin
  • 1/2 tsp smoked paprika

Method
 

  1. Preheat oven to 350 degrees.
  2. Chop all salsa ingredients.
  3. Mix all the salsa ingredients in a bowl with a wooden spoon, being gentle not to bruise the peaches.
  4. Pour into a serving bowl and serve with chips.
  5. Cut the tortilla wraps into wedges and lay them flat on a baking sheet.
  6. Mix and sprinkle spices onto the tortillas.
  7. Bake in the oven for 8-10 minutes.
  8. Serve with your salsa right away with warm tortilla chips.
