Fluffy Cinnamon Sugar Donut Muffins

Ingredients
  

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp ground cinnamon
  • 0.5 cups milk
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.25 cups granulated sugar (for coating)
  • 1 tsp ground cinnamon (for coating)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, 1 cup of granulated sugar, baking powder, salt, and ½ tsp ground cinnamon.
  3. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until well mixed.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Grease a muffin tin or use muffin liners. Fill each muffin cup about two-thirds full with the batter.
  6. Place the muffin tin in your preheated oven and bake for 15-20 minutes.
  7. Check for doneness by inserting a toothpick into the center; it should come out clean.
  8. While the muffins are baking, mix ¼ cup granulated sugar with 1 tsp ground cinnamon in a small bowl.
  9. Once baked, let the muffins cool for about 5 minutes, then dip the tops in the cinnamon sugar mixture.
