Whisk wet ingredients: In another bowl, whisk together 1 cup buttermilk, 2 large eggs, and ¼ cup vegetable oil until the mixture is smooth and well combined.
Combine mixtures: Gradually pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine.
