Grilled Lemon Chicken with Herbs

Ingredients
  

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs
  • 2 tablespoons fresh herbs (oregano, rosemary, thyme, or sage), finely chopped
  • 1 medium lemon (zest and juice)
  • 1 tablespoon granulated garlic or minced garlic cloves
  • 1 1/4 teaspoon kosher salt
  • 1/2 teaspoon cracked pepper
  • 1/4 teaspoon chili flakes (optional)
  • 1/4 cup olive oil

Method
 

  1. Pound thickest part of the chicken breast into uniform thickness aiming for 3/4 inch thick. If very large, cut into uniform sizes roughly 5-6 ounces each.
  2. Mix marinade ingredients together in a small bowl. Set aside 2 tablespoons for garnish. Marinate chicken for 30 minutes to a few days.
  3. Preheat grill to medium-high. Grill chicken for 5-6 minutes per side or until cooked through. Let it rest before serving.
  4. Serve grilled chicken with grilled lemon and fresh herbs. Spoon over reserved marinade.
