Grilled Peach & Goat Cheese Pizza

Ingredients
  

  • 1 packet active dry yeast
  • 1 cup warm water for proofing
  • 1 teaspoon sugar
  • 3 cups AP flour
  • 1 tablespoon Kosher salt
  • 1/4 cup extra virgin olive oil
  • 2 peaches, sliced preferably slightly underripe
  • 2 jalapenos, sliced
  • 4 ounces goat cheese
  • 8 ounces fresh mozzarella
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons capers
  • 2 teaspoons red pepper flakes
  • 1 tablespoon fresh oregano, finely chopped
  • 1 handful fresh basil, roughly chopped
  • 4 ounces Parmesan cheese, grated
  • Olive oil, for drizzling
  • Balsamic glaze, for serving

Method
 

  1. Proof your yeast by dissolving it along with sugar in warm water. Let it stand for about 10 minutes until frothy.
  2. In a large bowl, whisk together flour and salt. Add the proofed yeast and olive oil. Mix until a soft, sticky dough forms, cover, and let rise until doubled in size.
  3. Preheat the oven to 425 degrees F.
  4. On a floured surface, turn the dough out, divide, and roll into two 10-inch rounds. Place on pizza trays dusted with cornmeal.
  5. Top with tomatoes, capers, goat cheese, mozzarella, parmesan, red pepper, and oregano. Drizzle with olive oil and bake until golden.
  6. Grill peaches and jalapenos while pizzas bake, then add to pizzas with basil and drizzle with balsamic glaze before serving.
