Method
- Proof your yeast by dissolving it along with sugar in warm water. Let it stand for about 10 minutes until frothy.
- In a large bowl, whisk together flour and salt. Add the proofed yeast and olive oil. Mix until a soft, sticky dough forms, cover, and let rise until doubled in size.
- Preheat the oven to 425 degrees F.
- On a floured surface, turn the dough out, divide, and roll into two 10-inch rounds. Place on pizza trays dusted with cornmeal.
- Top with tomatoes, capers, goat cheese, mozzarella, parmesan, red pepper, and oregano. Drizzle with olive oil and bake until golden.
- Grill peaches and jalapenos while pizzas bake, then add to pizzas with basil and drizzle with balsamic glaze before serving.
