Ingredients

  • 4 medium russet potatoes about 1.5 lbs
  • 2 tbsp olive oil
  • 2 tbsp Old Bay seasoning plus extra for garnish
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • Fresh parsley chopped (optional, for garnish)
  • 8 oz cream cheese softened
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup lump crab meat fresh or canned
  • 1/2 cup shredded cheddar cheese
  • 1 tsp Old Bay seasoning
  • 1 tsp lemon juice
  • 1/2 tsp Worcestershire sauce
  • 1 clove garlic minced
  • 2 tbsp fresh parsley chopped (optional)
  • Lemon wedges
  • Extra Old Bay seasoning for sprinkling

Method

  1. Preheat your oven to 425°F (220°C) or set your air fryer to 375°F (190°C) if using one.
  2. Wash and scrub the potatoes thoroughly. Cut them into evenly sized fries, about 1/4-inch thick. Soak the potato slices in cold water for at least 30 minutes, then drain and pat dry.
  3. Toss the potato slices with olive oil, Old Bay seasoning, garlic powder, and black pepper until evenly coated. Spread in a single layer on a baking sheet or in your air fryer basket.
  4. Bake in the oven for 25-30 minutes or air fry for 15-20 minutes, flipping/shaking occasionally, until golden brown and crispy.
  5. In a medium mixing bowl, combine cream cheese, mayonnaise, and sour cream. Mix until smooth. Fold in crab meat, cheddar cheese, Old Bay seasoning, lemon juice, Worcestershire sauce, minced garlic, and parsley.
  6. Transfer the mixture to an oven-safe dish and bake at 375°F (190°C) for 20 minutes or microwave for 2-3 minutes until warmed through.
  7. Remove the fries from the oven or air fryer, sprinkle with additional Old Bay seasoning, and garnish with parsley if desired. Serve with cheesy crab dip and lemon wedges.

Notes

  • Fries can be cut thicker or thinner based on personal preference.
  • For a healthier version, consider baking instead of frying.
  • Store leftover crab dip in an airtight container in the fridge for up to 3 days.
