Jalapeno Popper Grilled Cheese

Ingredients
  

  • 2 Jalapenos sliced & seeds removed: Fresh jalapenos add a spicy kick and a crunchy texture to the sandwich. Always wear gloves when handling them to prevent irritation.
  • 4 oz cream cheese: The cream cheese serves as a creamy filler balancing the spice of the jalapenos with its smooth texture.
  • 4 slices turkey bacon crispy cooked: This ingredient adds a crispy texture and a savory flavor. It is a great alternative to traditional bacon, providing a leaner protein source.
  • 2 slices Monterey Jack: Known for its mild flavor and creamy texture Monterey Jack pairs perfectly with spicy jalapenos.
  • 2 slices sharp cheddar: The sharpness of cheddar adds depth to the flavor profile of the sandwich.
  • 4 slices Italian bread: This serves as the base for the sandwich providing a sturdy yet soft vessel for all the gooey fillings.
  • Chopped cilantro optional: A fresh garnish that enhances flavor and presentation.
  • Butter: Used for grilling to achieve that golden-brown crust.

Method
 

  1. Preheat your oven: Set your oven to 375°F (190°C). This temperature allows the jalapenos to roast perfectly while filling your kitchen with a delicious aroma.
  2. Prepare the jalapenos: Slice 2 jalapenos in half lengthwise and remove the seeds. In a small bowl, mix the 4 oz cream cheese until smooth. Stuff each jalapeno half with the cream cheese mixture.
  3. Bake the jalapenos: Place the stuffed jalapenos on a baking sheet lined with parchment paper. Bake them in the preheated oven for about 25-30 minutes, or until they are tender and the tops are slightly golden.
  4. Assemble your sandwich: While the jalapenos bake, take 2 slices of Italian bread and layer 2 slices of sharp cheddar on one side. On the other 2 slices, place 2 slices of Monterey Jack. Once the jalapenos are out of the oven and have cooled slightly, chop them and distribute evenly over the cheddar slices.
  5. Add the turkey bacon: Chop 4 slices of cooked turkey bacon and sprinkle evenly over the Monterey Jack slices. If you’d like, add chopped cilantro here for extra flavor.
  6. Complete the sandwich: Carefully place the other half of the sandwich over the fillings, cheddar side facing the jalapenos and Monterey Jack side facing the turkey bacon.
  7. Butter and grill: Spread butter on the outside of each sandwich slice. Heat a skillet over medium-low heat and grill the sandwiches until golden brown on both sides, about 3-4 minutes per side. Keep an eye on them to prevent burning!
