Method
- First, brown your butter by adding it to a large saucepan over medium heat. Whisk constantly until it turns a golden amber color and gives off a nutty aroma. Transfer to a bowl to cool.
- In a mixer, combine the brown butter, dark brown sugar, granulated sugar, and lime zest. Mix on medium speed for about 1-2 minutes.
- Add in the egg, egg yolk, and vanilla, mixing until smooth and creamy.
- In a separate bowl, whisk together flour, baking soda, and salt. Slowly add to the mixer and combine. Then mix in white chocolate and macadamia nuts.
- Scoop about 2 tablespoons of dough, roll into balls, and chill in the fridge for 1 hour.
- Preheat oven to 350°F. Place dough balls on baking sheet and bake for 9-11 minutes until the edges are golden brown.
- Cool cookies on sheets for 5 minutes before transferring to a wire rack to cool completely.
