Preheat your oven to 400°F (200°C). While the oven is heating up, prepare the beets by washing and trimming them.
In a bowl, toss the 4 medium beets with a drizzle of olive oil (about 1 tablespoon should suffice), ensuring they are well-coated. This will help them roast evenly.
Place the beets on a baking sheet lined with parchment paper and roast for 20 minutes, or until they are tender when pierced with a fork.
After the initial roasting, remove the beets from the oven and brush them generously with 1/4 cup maple syrup. Return them to the oven and roast for an additional 5 minutes, allowing the syrup to caramelize and create a beautiful glaze.
Once the beets are done, allow them to cool slightly before slicing them into bite-sized cubes or wedges for easier assembly.
Thread the roasted beet pieces onto skewers, alternating with dollops of 1/4 cup goat cheese and 2 tablespoons toasted pistachios for a pop of color and flavor.
Arrange the skewers on a serving platter, and if desired, drizzle a little more maple syrup over the top for added sweetness and visual appeal. Serve warm or at room temperature.
