Method
- Make the Meatball Mixture: In a large mixing bowl, combine 1 lb ground turkey, 1 large egg, ½ cup breadcrumbs, ⅓ cup grated Parmesan cheese, 2 tbsp milk, 2 minced garlic cloves, 1 tsp onion powder, 1 tsp dried oregano, 1 tsp dried basil, ½ tsp smoked paprika, ½ tsp salt, and ¼ tsp black pepper. Mix gently until combined, being careful not to overmix, as this can lead to tough meatballs.
- Stuff the Meatballs: Take about 2 tablespoons of the mixture, flatten it in your hand, and place a mozzarella ball or piece in the center. Carefully roll the mixture around the cheese, sealing it fully to form a ball. Repeat this process until all the meatball mixture is used.
Cook the Meatballs: You can choose between two cooking methods:
- Oven Method: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and place the meatballs on it. Bake for 20–25 minutes or until they are golden brown and cooked through.
- Stovetop Method: In a skillet over medium heat, add 1 tbsp olive oil. Gently place the meatballs in the skillet and sear them until golden brown, about 10 minutes. Cover the skillet and reduce the heat to low, cooking until the meatballs are cooked through.
- Prepare the Sauce: In a separate saucepan, heat 2 tbsp olive oil over medium heat. Add 1 small diced onion and sauté until translucent. Add 3 minced garlic cloves and cook for an additional minute. Then, pour in 1 can (28 oz) crushed tomatoes and stir in 1 tsp sugar, 1 tsp dried oregano, ½ tsp red pepper flakes (if using), and season with salt and pepper to taste. Allow the sauce to simmer for 15-20 minutes to develop the flavors.
- Combine Meatballs and Sauce: Once the meatballs are cooked, add them to the sauce, spooning sauce over each meatball. Let them simmer together for about 5 minutes to meld the flavors.
- Serve: Garnish your Mozzarella-Stuffed Turkey Meatballs with fresh basil leaves. These meatballs are delicious served over your choice of pasta, with crusty bread, or alongside a fresh salad!
