Ingredients
  

  • ½ cup coconut milk: The star ingredient coconut milk, delivers a rich, creamy texture, making your smoothie luscious while providing healthy fats.
  • ½ cup pineapple: Fresh or frozen pineapple offers natural sweetness vitamin C, and antioxidants, enhancing its flavor and nutritional value.
  • ¼ cup yogurt: Yogurt adds a delightful tartness and creaminess contributing protein and probiotics, making this smoothie great for digestion.
  • 1 teaspoon hemp seeds optional: A nutritional powerhouse, hemp seeds are rich in omega-3 and omega-6 fatty acids. They blend seamlessly into the smoothie for added health benefits.
  • 1 Medjool date or sweetener of choice: This serves as a natural sweetener. The Medjool date provides additional fiber and flavor; however you can opt for honey, maple syrup, or any sweetener you prefer.
  • 1 cup ice: Ice ensures your smoothie is chilled and refreshing perfect for a warm day or if you’re craving a frosty beverage.

Method
 

  1. Gather all ingredients: Ensure you have ½ cup of coconut milk, ½ cup of fresh or frozen pineapple, ¼ cup yogurt, 1 teaspoon hemp seeds (if using), 1 Medjool date or sweetener of your choice, and 1 cup of ice.
  2. Prepare the pineapple: If you are using fresh pineapple, peel and chop it into smaller chunks for easier blending. If using frozen, measure out ½ cup directly from the freezer.
  3. Add the liquid ingredients: In your high-speed blender, start by pouring in ½ cup of coconut milk followed by ¼ cup of yogurt. This will help create a smooth texture.
  4. Add the fruit and sweetener: Next, add ½ cup of pineapple chunks, 1 Medjool date (pitted), or your chosen sweetener. If you opted for hemp seeds, sprinkle them in now.
  5. Finish with ice: Finally, add 1 cup of ice to the blender. This will chill and thicken your smoothie.
  6. Blend until smooth: Secure the lid and blend on high until all ingredients are well combined and the mixture is creamy and smooth. This should take about 30 seconds to 1 minute.
  7. Taste and adjust: Stop the blender and taste your smoothie. If you prefer it sweeter, add more sweetener and blend again.
  8. Serve immediately: Pour your smoothie into a glass and enjoy immediately for the freshest taste.
