Servings: 4 servings
Course: Side Dishes
Cuisine: American-Italian

Ingredients

  • 1 large peach or 2 small peaches: The star of the salad, peaches add natural sweetness.
  • 1 large avocado: Provides a creamy texture that contrasts nicely with the other ingredients.
  • 2 small shallots: Add a mild sweet flavor that enhances the overall taste of the salad.
  • 8 to 10 cups baby arugula: Offers a peppery bite that balances the sweetness of the peaches.
  • 1/4 cup salted pistachios: Introduce a crunchy texture and nutty flavor.
  • 4 slices prosciutto: Brings a savory and slightly salty element to the dish.
  • 6 oz burrata cheese: Contributes a rich and creamy texture that complements the fresh produce.
  • 6 medium basil leaves: Fresh basil adds a burst of herby freshness.
For the salad dressing:
  • Zest from 1 lemon: Provides a citrusy spark.
  • 1/4 cup lemon juice freshly squeezed: Adds brightness and tang.
  • 1/4 cup olive oil: Gives the dressing a smooth base.
  • 1 tbsp maple syrup or honey: Offers a touch of sweetness to balance the acidity.
  • 1 tbsp Dijon mustard: Introduces a mild spice.
  • 2 garlic cloves: Infuse a pungent earthy flavor.
  • 1 tbsp fresh thyme: Adds depth with its minty slightly lemony taste.
  • Sea salt and ground black pepper to taste: Enhance the overall flavors of the salad.

Method

  1. Prepare the Ingredients: Begin by slicing the peaches into wedges or thin slices. Slice the avocado and shallot similarly.
  2. Assemble the Salad: Spread the arugula on a serving platter. Distribute the sliced shallots, peaches, and avocado evenly over the arugula. Sprinkle pistachios on top.
  3. Add Prosciutto and Cheese: Tear the prosciutto into smaller pieces and scatter them over the salad. Tear the burrata into chunks and add them to the salad.
  4. Prepare the Basil: Stack and roll the basil leaves, then chop them gently. Sprinkle over the salad.
  5. Make the Dressing: Zest the lemon into a measuring cup, then squeeze in the lemon juice. Add olive oil, maple syrup, mustard, salt, pepper, and thyme. Grate in the garlic and whisk everything together.
  6. Dress and Serve: Pour the dressing over the salad when ready to serve and toss gently with the salad spoons.

Notes

  • Seasonal Ingredients: Opt for seasonal, locally-sourced peaches for a fresher, more flavorful salad.
  • Variations: Feel free to substitute spinach or baby kale for arugula if desired.
  • Cheese Options: While burrata is ideal, fresh mozzarella or feta can be used as alternatives.
