Pumpkin French Toast

Enjoy Pumpkin French Toast—fluffy, spiced bread soaked in a creamy pumpkin mixture and cooked to golden perfection. A cozy breakfast delight.

Ingredients

  • 4 large eggs: Eggs are essential for binding the ingredients together providing structure and richness to the French toast.
  • ½ cup milk: Milk adds moisture and creaminess to the batter enhancing the texture of the toast.
  • ½ cup pumpkin puree: This is the star of the dish! Pumpkin puree brings in that signature fall flavor while also being nutritious and naturally sweet.
  • 2 tbsp brown sugar: Brown sugar introduces a touch of sweetness and helps create a caramelized crust on the toast.
  • 1 tsp vanilla extract: Vanilla enhances the warmth of the spice and adds a lovely aroma to the dish.
  • 1 tsp ground cinnamon: This spice is synonymous with fall providing warmth and depth to the flavor.
  • ½ tsp pumpkin pie spice: A blend of spices this ingredient ties everything together with hints of nutmeg and ginger, which are iconic of the season.
  • 8 slices of thick bread brioche or challah: Thick slices of bread are ideal for soaking up the custard-like mixture, creating a fluffy and tender inside.
  • Butter for cooking: Using butter adds flavor and helps achieve a beautiful golden-brown crust.
  • Maple syrup whipped cream, and powdered sugar for serving: These toppings elevate the dish, making it a true breakfast indulgence.

Method

  1. Mix the Batter: In a large mixing bowl, whisk together 4 large eggs, ½ cup milk, ½ cup pumpkin puree, 2 tbsp brown sugar, 1 tsp vanilla extract, 1 tsp ground cinnamon, and ½ tsp pumpkin pie spice until the mixture is smooth and well combined. Ensure there are no lumps to achieve a silky texture.
  2. Dip the Bread: If you have a skillet, heat it over medium heat. Lightly butter the skillet with your preferred amount of butter for cooking. Take each slice of 8 slices of thick bread (brioche or challah) and coat it thoroughly in the pumpkin batter, allowing it to soak for a few seconds to absorb the flavors.
  3. Cook the French Toast: Place the soaked slices onto the hot skillet and cook each piece for 2-3 minutes on one side, or until they are golden brown. Flip them over carefully, cooking for another 2-3 minutes until both sides are beautifully golden and the toast is cooked through.
  4. Serve: Stack your pumpkin French toast on a serving plate. For a decadent finish, drizzle with maple syrup, top with whipped cream, and dust with powdered sugar. Enjoy this delicious fall breakfast immediately!
